Cucumber Roll Ups makes as many as you’d like Ingredients: 1 large cucumber Raw Bean-Free Hummus Sun Dried Tomato Sauce (recipe below) Directions: To create your cucumber rolls, you’ll need a mandolin or a wide vegetable peeler . Slice the cucumber lengthwise, into very thin slices. Because they are so thin, you’ll want to double-up the slices for each roll , like so: Apply a thin layer of of hummus lengthwise down each slice. Then roll up, and top each roll with a dollop of tomato sauce! And to think, I was tempted to just have cucumber slices with hummus for lunch. These roll-ups are way more fun!

While you can create a variety of flavor combinations using any dips or sauces you like ( this pesto would be delicious, and you could make a kid-friendly version using almond butter and honey) , I loved this pairing of hummus + tomato sauce.
Sun Dried Tomato Sauce makes about 1 1/2 cups Ingredients: 3 oz. sun dried tomatoes 2 roasted red peppers (here’s an easy how-to-guide on roasting peppers ) 1/2 cup water 2 cloves raw garlic 1/4 cup fresh basil 1/2 teaspoon salt, or to taste Directions: In a high-speed blender, blend all the ingredients until smooth and creamy. This makes a very thick, richly tomato-flavored sauce. Feel free to add more liquid, or adjust the ingredients, to suit your tastes! Enjoy! ©Detoxinista.com
Next time, I think I’ll reduce the amount of sun dried tomatoes, to bring out the roasted red pepper flavor a bit more. (I can’t get enough of roasted red peppers lately!)
